It comes from the Neckenmarkt’s oldest vines and best spots, from 9 parcels (80% slate, 15% limestone and 5% clay). A cool area, 40- to 85-year-old vines, spontaneous fermentation in vats. Altogether 20 months of ageing in 5 hectolitre barrels. For eight months, it was aged separately by parcel, then for 12 months together, with the constant tasting of the best barrels. Bottled unfiltered and unfined.
