“I don’t want to feel tropical notes in the glass, therefore, the bunches age on the vines always in the shade of a few leaves,” says Katharina Tinnacher.
The estate’s ‘village wine’ is the crop of six parcels grown in an amphitheatre-shaped plot. The grapes come from the younger vines grown on a slope of 80-degree steepness. The sandy soil and the riper fruit result in a slightly more direct wine compared to the restrained, precise, single-vineyard wines of the winery. The hand harvest was followed by 24 hours of skin contact, then fine pressing. After the spontaneous fermentation and malolactic fermentation, it was aged undisturbed for 8 months, in cooled steel tanks and in the old oval barrels of the cellar. It has a looser structure and shows the riper form of a Styrian Sauvignon. Aromas of rosemary and white currant on the nose, ethereal palate, with delicately sparkling acidity.
