The Saybritz is an offbeat vineyard in the life of the winery, and it’s also from where Franz Weninger's most cherished and smallest-batch wine arrives from. It is located 70 km south of the Balf-Horitschon axis, on the slopes of Vaskereszetes Hill. The tiny 0.6-hectare site is very steep with a stunning view. 
The 50-year-old Olaszrizling and Blaufränkisch (Kékfrankos) vines line the blue and green slate soil. “We can’t come here with a tractor, so the soil is not compacted, either. It’s one of our best performing vineyards every year." – F.W. Due to the angle of the slope (and the beautiful view), the Weningers harvest this plot within a family circle every year.
After destemming, the Blaufränkisch grapes of Saybritz's old vines are spontaneously fermented in wooden vats, with punching down. At the end of fermentation, the free-run juice goes into large barrels, where it rests on lees without any added sulphur, stirring or battonage until bottling. Finally, it’s bottled with a little added sulphur, in an unfiltered, unfined form. It’s a deep and layered Blaufränkisch with herbal, sour cherry notes, round flavours, lots of energy and long ageing potential. Partly, it shows the most classic notes of Blaufränkisch, though it also has such a unique character that when tasting it blind, we had a colleague who knew that it was Saybritz Blaufrankisch in the glass. It’s a rarity, a fine wine.
