The Saybritz is the vineyard at Weninger’s aunt's holiday home, an hour south of the Horitschon-Balf axis, with 45-year-old vines, a few steep rows on green slate.
“Since it’s so steep, the tractor cannot enter here. Thus, the soil is not compressed either, and the vines are in great balance. We do the harvest in this vineyard with the traditional basket every year, within the family circle.” – Franz WeningerThe Olaszrizling was trod by foot and kept in whole bunches for half a day, then it was put into used barrels from the press and spontaneously fermented. An unfiltered, unfined wine bottled with minimal suphur.
