Nicolas Potel works with a huge selection, his parcels scattered among the villages cover almost the entire Cote d'Or. The old member of our selection is the Savigny-les-Beaune, which he usually blends from four small Chardonnay plots (Les Planchots, Champs Pruniers, Dessus de Vermots and Les Pimentiers), from a total of 1.6 hectares, where the average age of the densely planted vines is 40 years. The whole-bunch pressing was followed by spontaneous fermentation, then a year and a half of ageing in barrels (of which 25% were new). The character of the village and the winemaker return in this deeper, heavier, rounder version of Burgundy. The palate is long and substantial, with lots of details.
