One of the brightest wines of our Chablis selection, which David Lavantureux first poured for us in November 2023, when we visited Lignorelles at the northern end of the cool wine region. Vau de Vey is a premier cru vineyard with a steep slope, the cultivation of which they took over in 2018, and since then all the work has been done organically and by hand. It’s a full-blooded Burgundy, with the usual firmness of Chablis. It’s a great wine.
