Trois cépages, meaning a blend of three varieties. The twist is that the grapes (Pinot Noir, Trousseau, Poulsard) are not only blended but also co-fermented. Harvested from the parcels closest to the winery, then after sorting, the entire quantity is destemmed (as in Volnay). Seasoned Burgundy barrels are used for the ageing. Silkiness comes from the Pinot Noir, structure from the Trousseau and spice from the Poulsard. A charming, intensely aromatic and flavourful, spicy blend. The 2023 vintage in Jura produced full-bodied wines with good acidity, fruitiness and richness.
