The white counterpart of the legendary red blend, of which nearly 40% is the family's favourite white variety, Viognier, each year. It also features significant amounts of Chardonnay, Petit Manseng, Chenin Blanc and 10 other rare varieties. The nearly 40-year-old vines grow on limestone soil in the clearings scattered across the Gassac Valley. The organic grapes are harvested exclusively by hand, followed by a 2-3 day cold maceration at the winery. Fermentation starts in chilled tanks, unlike at traditional estates, and bottling follows after just 4-5 months of ageing.
Spring aromas, acacia flowers, apricots and fresh must. A light-textured, ethereal wine with soft acidity, melon flavours, subtly felt minerality and citrus sourness.
Even bats play a role in the environmental cultivation on the slopes of the Villeveyrac Valley, which overlook the Mediterranean in Languedoc. Red wines are made from the plots with clay-limestone soils, while whites and rosés come from the shores of the Thau Lagoon.
