One of the best autumn alternatives to the stridently green Sauvignon Blanc is Picpoul – a rare bird, an ancient variety that has found its true home primarily on ‘the other French Riviera’, in the appellation named after it. The windswept limestone plateau and the coastal vineyards still prove today that it nicely tolerates the salty, drying sea air. The grapes, harvested at dawn, were fermented in temperature-controlled steel tanks and then aged for 4-5 months. The wine is both classic and original. Its greenish tones are crisp, as in a Sauvignon Blanc, but the overall effect is rounder and more refined. Its colour is pale gold, and the nose exudes freshness and crisp, yellow floral aromas. The palate is full-bodied, yet fresh and vibrant, with perfect balance, crisp acidity and a long finish. A wine with a unique character, from a rare variety, from one of the region's most renowned family-owned estates.

Even bats play a role in the environmental cultivation on the slopes of the Villeveyrac Valley, which overlook the Mediterranean in Languedoc. Red wines are made from the plots with clay-limestone soils, while whites and rosés come from the shores of the Thau Lagoon.
