The Loire’s best-known appellation, which is also the most authentic Sauvignon Blanc place of growth in the Old World. The organically cultivated vineyards are located 200-400 metres above sea level in three vineyards around the villages of Bué, Verdigny and St. Gemme. The complexity of the chalky, calcareous, clay and flint soil results in exceptionally complex wines. Each bottle is made 100% from their own grapes, with a natural approach: hand harvesting, fermentation at a controlled temperature with wild yeast, ageing on lees and low sulphur content. It has an elegant greenish aroma with spices, elderberry and cool lime. The structure of the palate is led by the acidity – it’s dynamic, mineral, yet soft and dense.
Pascal Jolivet, ambassador of Sauvignon Blanc and its homeland, the Loire Valley, has put everything into the variety via the two classic places of growth – the terroir of the milder and mineral Sancerre and the flinty and lean, ‘gunpowder’ Pouilly-Fumé. He has built on their success with Attitude, from Touraine.
