Joost, the former chairman of the Dutch stock exchange, and his family, returned to his native country almost 30 years ago to devote himself to the Loire Valley and one of its main varieties – Sauvignon Blanc. The Sancerre Blanc is made by blending the three characteristic terroirs of the famous appellation. Caillottes stands for limestone, Terres Blanches for the marl, and Silex for the flint soil – the proportions of which change each year according to the vintage. After the gentle pressing, fermentation is traditionally carried out in steel tanks, then it is aged for half a year on fine lees, with frequent stirring. The wine of the cooler 2021 vintage is intense, aromatic, almost New World in style, with a ripe fruit flavour and vegetal aromas.
The philosophy of Joost de Villebois is about finding the best of Sauvignon Blanc through discarding all things conventional, though by treating the Loire Valley terroir with respect. Vivid green wines from the vineyards of Touraine, Sancerre, Pouilly-Fumé and Quincy.
