The Busch style differs from the usual Mosel style. Lively acids, great thickness – which also explains why this wine is such a great experience – harvested from the grey slate parcel, the colour of which is the same as the capsule on the bottle top. Clemens quickly abandoned the approach of the wine region’s precise engineer-like winemakers and started cultivating organically 40 years ago, then switched to biodynamics in 2005. Ever since, this has been the only innovative method used on the estate, since everything else is very simple and traditional. They harvest from mid-Mosel’s almost vertical slopes, transport the grapes to the other side of the river by ferry, followed by a half-a-day long, very slow pressing in the winery, then the must ferments slowly in traditional fuder (1000-litre local barrels) with its own yeast. Decanting is recommended, as well as tasting at red wine temperature.

Clemens Busch’s Mosel winery lies on one side of the river, with the vineyards on the other. The grapes picked from the almost vertical slate hillside are taken to the winery by ferry. Cultivation is biodynamic, fermentation is spontaneous, ageing is in old oval barrels: dry wines and some sweets are created here.
