Robert Gilvesy’s new wine, the St. George, is made from 100% organic grapes that grow on Szent György Hill. It had been an old plan of his to make a more richly detailed, more distinctive version of Bohém, and for this, he managed to harvest from the estate’s organically cultivated plots in 2019. The wine was made up by the three defining varieties of the hill – Riesling, Olaszrizling and Furmint, which were spontaneously fermented and aged partly in barrels after several trial blends. Robert’s grandfather, who was called György, emigrated to Canada, to the region of the Great Lakes in 1929. He took part in the building of the Hungarian church of the tobacco belt, which was eventually dedicated to Saint George with the fresco depicting him in it. That’s where Robert first encountered the martyr’s legend, which also defines the history of the Balaton mesa.
