An ‘estate wine’ selected from the winery's nicest barrels. It’s an excellently proportioned blend of beautifully aged Chardonnay, Riesling, Olaszrizling and Grüner Veltliner that was hand-picked from vines growing in brown forest soil interspersed with strips of sand. The spontaneous fermentation was followed by 9 months of ageing in Francois Ferry’s 300-litre Burgundy and Austrian Stockinger barrels. White flowers, peach and pear aromas, then a pleasantly salty-mineral palate with oak flavours matching the wine. The name refers to the remnants of the Pannonian Sea, which were discovered 12 metres beneath the layer of volcanic rock, during the construction of the new cellar.
