Tasting the 2020 Páva was an unforgettable experience – it was that impressive. But Dani managed to elevate it even further with the new vintage. The 2021 Páva is astonishingly layered, intensely aromatic, powerful, dense and far reaching.
Compared to the rest of the selection, it’s a small-batch wine, produced only in ‘favourite’ vintages. For the past 20 years, the Kis-hegy estate has been all about Bordeaux varieties. Many great classics have been created; it’s easy to stop at Loliense, but Páva takes things to another level. It delivers the flavours collectors seek in prestigious Rioja bodegas or Bordeaux châteaux. The 2021 Páva is crafted exclusively from Cabernet Sauvignon.
After hand harvesting, the grapes are destemmed and gently moved using gravity, followed by a four-week maceration on the skins. The young wine is racked into Hungarian barrique barrels without pumps and aged for 15 months. Soft tannins, paprika, eastern spices, impeccable balance and a long, flowing finish.
