Spending time with winemakers in the cellars, we often stumble upon exceptional wines. They are exceptional because they stand out from the selection of the given estate, or because we find unusual, but at the same time great flavours in them, or because they are one-off experiments and small batches. With such wines, we might wink at each other, if possible, then reach for a piece of chalk and mark and reserve a barrel. In other words, we choose.

The series starts with an exciting Olaszrizling from Balaton, which we spotted in Dávid Bökő's cellar. It could be an estate wine as Dávid's most important areas are all in it. A little bit from everywhere has found its way into this Olaszrizling – Lőcze and Sáfránykert from Csopak, Baricska from Balatonfüred and Vörösmál from Aszófő. The organically-grown grapes were harvested manually, followed by destemming, spontaneous fermentation in tanks, pressing, then ageing on fine lees. The usual richness and natural purity of Dávid's wines are combined with a calmer character and more mature flavours, and it reminds us of the classics of the wine region.

2,000 bottles of it have been made.

As the series continues, we’ve decided to organize the wines selected by Bortársaság under a common label. The form is already given and the process has been fast – after minimal graphic design work, printing and packaging, we will present the next wines in the heat of discovering them.

From now, any wine that’s close to us can go under this label, with the selection being expanded continuously.
