In the last few years, it has been Dávid Bökő who has single-handedly been making the pale pink TIHANY rosé that’s based on Attila Tálos’ basic idea: whole-bunch pressing, spontaneous fermentation and ageing on lees. That wine’s slightly wilder version was made in the 2020 vintage. Although, the raw material comes from the same place, while the TIHANY rosé is 100% Kékfrankos, here, it’s Zweigelt that gives the base of this wine. After two days of skin contact, then pressing, it was put into small used barrels, with an extra 10% of hand-destemmed Kékfrankos added to the fermenting must. After half a year of ageing, it was bottled in magnum bottles without filtering or fining. It has a deeper colour, a lively and explosive nose, pure fruit, and a full, flavour-rich palate. A one-off release of which 100 magnum bottles were made.
