Paloznak, with its concrete-grey label, is a genuine estate wine at the winery, with grapes selected from within the village, made from the well-proportioned blend of the two Rizlings (Olaszrizling and Riesling). “Ripeness is very important for us, we don’t pick anything too early, that’s why our wines have this style,” says Peti Nagyváradi. The harvest is followed by sorting, pressing and spontaneous fermentation in temperature-controlled tanks. At the end of the ageing on the lees and blending, a round, ripe, warm and very balanced wine is made, through which anybody can recognise the style of the winery.
