Syrah has been grown on one of the parcels of their most important vineyards – Hajnóczy – since the beginning. It’s very rare at Balaton. “We made great friends with it, it likes being here,” says Attila Homonna. The warmer, loess and marl plot brings out the best in the variety. It’s a lively, spicy, pale coloured and appealing wine. The gently destemmed whole berries are put into the open vats, where fermentation starts spontaneously, then it is finished in used barrels. Unfiltered, unfined bottling with a touch of sulphur.
