Juhfark is an old member of Gyula’s selection from Monoszló. The 35-year-old vines grow on the volcanic, basalt tuff soil on the 0.3-hectare parcel of the Pangyér vineyard. The grapes harvested by hand in October, the almost shrivelled berries, were put into the press in whole bunches, then the must was put into two used barrels (700-litre and 225-litre), where the two-month long fermentation started spontaneously, which was followed by six months of ageing. The proportions push the limits – the 8 grams of residual sugar is complemented by the 10 grams of acidity, juicy, lively and citrusy flavours.
