A cornerstone of Péter’s small range of wines. Chardonnay from a parcel in Pécsely, harvested in several passes. Beneath the rows runs Permian red sandstone, which gives the wine its name. The grapes were foot-trodden while still in the harvest crates, then transferred to a 150-year-old basket press. After slow pressing, the must settled overnight in stainless steel before being moved into barrels. It fermented spontaneously exclusively in used 225-litre French oak and remained there undisturbed until bottling. It was racked off the fine lees after 11 months. Bottled unfined and unfiltered, with 15 mg/l total added sulphur.
Creamy and saline at the same time, a characterful Chardonnay. Smoke, apricot and lemon tart on the nose. Yellow apple, beeswax and yeasty notes also appear, while the palate is smooth and rounded, with a barely perceptible but delicate sparkle emerging at the end.
