One of Antal Benesch's favourite varieties, this 2023 Sauvignon Blanc blends the fresh and fruity style of the New World with the rounder, mature notes of the Old World. Harvested at three different times: the first, early September picking was chilled and fermented reductively, highlighting the wine's fresh, vibrant acidity. The second, mid-September harvest produced must from much riper grapes, which was fermented and aged with regular lees stirring, creating a round and full flavour profile. The third component, referred to by Anti as the "Sauvignon twist," was harvested near overripeness and kept on the skins with lees stirring for 4 months. The female figures on the Mandorla labels are inspired by the impressive motifs of the archbishop’s palace's ornate dining room, creating a symbol bridging tradition and innovation. The nose is intense yet elegant, with exotic fruits, while the palate features freshness and fruitiness with lime, elderberry and a hint of pineapple, alongside restrained saltiness.
