A Bikavér Superior blend from the Ostoros winery that’s carved into the tuff. Half of it is Kékfrankos, complemented by Cabernet Sauvignon, Blauburger, Zweigelt and Pinot Noir, all hand-harvested from vineyards in transition to organic farming. Controlled fermentation in tanks, 18 months of ageing in 225- and 300-litre oak barrels, followed by half a year of bottle maturation. Precise winemaking with good proportions, a cool character and refined oak use.
What truly makes it special is the unique philosophy behind the blend. Gergő is perhaps the only one in the region who blends his wines before barrel ageing. This way, the Bikavér is not created afterwards – it goes into the barrels already as a finished blend.
The idea arose from the fact that the many different varieties, each with their own maturation time, are difficult to harmonise properly when aged separately. That’s why he decided to combine them from the very beginning and let them shape and refine together during the ageing process.
He has been using this method since 2019, and the results in every vintage confirm his decision: the wine is more unified, integrated and lively. A refreshing, subtly tannic, slightly vegetal Bikavér, crafted by skilled hands.
