A few years ago, Pinot Noir played a leading role, but now it has crystallized on the Eger estate that the local tradition of Bikavér will be the wine they can build on, from the entry-level wines to the single-vineyard category. This is how this vibrant and lively Bikavér from the Pajados vineyard was made in 2017. “The easiest way is to compare it to coffee: if Síkhegy is the darker Italian roast, then Pajados is the fruitier, more acidic and more modern light roast,” says Titi. Besides the base of Kékfrankos and Kadarka, it has Syrah, Cabernet Franc, Merlot and Pinot Noir in it. Harvested at complete ripeness, spontaneous fermentation was followed by ageing in 500-litre barrels, out of which 15% were new. It’s a modern red blend that was bottled locally, unfiltered and unfined, from one of the biggest names in Eger.
