The Gáls swear by the wine style, not by recipes. Therefore, the emphasis is not on the proportions or compositions of the grape varieties but on the outcome. The raw material came from the 20-year-old vines of the Pajados vineyard with warm, rhyolite tuff soil, near Ostoros, which was spontaneously fermented in vats, then aged for 14 months in 500-litre barrels. Lively acidity, deep flavours, soft tannins and lots of fruit, with the unique and inimitable minerality typical of the vineyard.
