The most elegant wine we've tasted at Edgar’s so far. A real selection, of 100% Grünspitz, from the warm and steep parcel of their best vineyard. It’s the favourite variety, from the favourite place, and they take the harvest date and winemaking as seriously as possible. It has a classic style, mature flavours, subtle lees notes and a smooth structure. The bunches, which were picked at full ripeness, were destemmed, then pressed after two days of skin contact, then 20% was fermented in tanks and 80% in used barrels, to dry. The unfined, unfiltered wine was bottled at the cellar, with minimal added sulphur.
