The free-run must of the Olaszrizling grown on the volcanic soil of Monoszló and Mindszentkálla in the Káli Basin was settled for a night, then after spontaneous fermentation and 5 months of ageing, 50% in tank and 50% in barrel, it was bottled. At the time of the 2021 harvest, they were already being aided by the newly-arrived membrane press, the use of which instead of treading made the whole-bunch pressing a lot easier. They finally didn’t have to work until dawn, which was beneficial for both the team and the wine. It has everything that an estate wine typical of the region should have. It has the structure of the Káli Basin, power and mellowness, aromas of pear, apple, honey, white flowers and almonds, with vibrant acidity.
