Miklós Csabi presented renewed design and fresh wines to us this spring. Our absolute favourite from the range is the Sauvignon Blanc, harvested from the loess soil of Látó Hill. The fruit was picked in two rounds, fermented with one half focusing on the acidity and the other on the fruity character, then the two were blended before bottling. The subtle minerality characteristic of the place of growth and cellar accompanies the fresh, green notes typical of the variety.
In harmony, with a wide, sincere smile on my face - Changing thoughts with miklóscsabi
BT: Miklós Csabi, seperately with capital letters or miklóscsabi, as a single word with small letters? MCS: As a single word with small letters. But this is not a trademark or such a thing, my friends have always been called me miklóscsabi.
BT: If I knew well, the cool texts on the labels with their particular humour are written by you. MCS: It is true, and however it is surprising but I write them in temperate condition. I do not want to overstep myself, I am a young, funny viticulturist for whom first of all the wine making is an experience and I would like to hand over this experience. But this would not be possible with labels of "hard working".
BT: How did you get close to the wine? MCS: I am lucky since I found my craft when I was 14, then I wanted to deal with grape and make wines. If I want to be entirely sincere I think my wines are not better than average. They are good wines. But I think that in my own cool, humorous and sincere way I can hand over people that kind of experience, ecstasy which the wines made with the nature together can mean. And perhaps in this handing over I can be a little bit better than average.
BT: In your opinion what is the real ezerjó from Mór is like? MCS: It is semi dry with sharp acids and discreet aroma. It means that the Nirvana is not a typical ezerjó from Mór, it rather shows a possibility of Mór and a grape: it is from shrivelled grape, with good acids. This is a cooler sweet wine.
BT: If we spin forward the wheel of time with five years how would you like to see yourself? MCS: In harmony with myself, with wide and sincere smile on my face. And naturally I would like to make wines in Mór since I get goose pimples only in this wine land when I visit the vineyard.
