Biodynamic cultivation, great timing of the harvest and a concentrated crop. Half of the bunches were not destemmed, which is how they were put into the vat alongside the destemmed half, with the fermentation taking place in the vat for three weeks - first with treading, then with punching down. Owing to the fermentation within the berries and thus due to the lengthy procedure, the result is more complex and layered. Following fermentation, the free-run juice was put into the barrels, where malolactic fermentation was followed by eight months of ageing. It was bottled without fining or filtering. A lively coloured wine that's continuously changing and opening up, with rosehip and undergrowth aromas. The backbone of the balanced palate is provided by the measured use of oak and it is kept taut by the acidity of the limestone soil.
