It was well after planting, during the first virgin harvest from the Pinot Noir vines of the Frettner vineyard, that it became clear the vine nursery had made a mistake: the vines bore bunches of white grapes, and more precisely, Pinot Blanc. That was at least 25 years ago, and in the end, the variety proved to be an even better fit than Pinot Noir for the dense, clay-schist soil of the parcel, which is bordered by forest. For years, this juicy, gently hazy natural white has been one of our favourite wines from Weninger. Biodynamic cultivation, lush green cover crops and hand harvesting. It underwent spontaneous fermentation in large barrels, and was then matured for another 11 months on fine lees. The classic 2023 vintage once again delivers subtle aromas of yeast, grapes and peaches. Alongside these, lime and apple cider vinegar appear. The palate is both densely textured and refreshing at the same time.
Unfiltered and unfined bottling carried out on-site at the winery, with minimal added sulphur (12 mg/l).
Bottled in January 2025. A total of 7,500 bottles made.
