This Cabernet was made based on the principles of an old and popular winemaking school. The small and almost black bunches were picked from the organically cultivated plot in Porkoláb Valley, shortly after full ripening. The deep flavours and most of the substance were in the skins, which is why Miklós decided to leave plenty of time for fermentation and maceration. The dense and deep-coloured fresh wine that was racked from the skins continued in one of the 13 Mecsek barrels, where ageing continued until the next harvest. Then, it was bottled directly from the barrel, by hand, unfiltered. Grape skins, blackberry notes, oak flavours, thickness, with a sweetish, fiery finish. A classic Illyés wine.
