Vineyards on the terraces, a gravity flow cellar sunk into the hillside, precise winemaking and pure flavours. These things come to mind when one thinks about the Lajvér estate, from where we have also now chosen a lively, New World-style Sauvignon. It could already be felt fresh after the fermentation that it would be a great success. It’s a modern Sauvignon, with a rich nose of tropical fruit and citrus fruit, cut grass, lively acidity and a subtly mineral finish on the complex and delicate palate. The hand harvest was followed by reductive processing, temperature-controlled fermentation and short ageing on the fine lees.
