The new vintage of Kacsa (i.e. duck) has arrived with the same freshness and generosity as before. By the fifth vintage, the form of it has been refined a lot, the formula appears to be getting finalized, yet it is still the same light wine based on classic foundations that István and ourselves dreamed up together. It’s blended from the ingredients of several Mád vineyards. Similarly to István's big single-vineyard wines, the gentle pressing is followed by one-third barrel fermentation and two- thirds tank fermentation, then bottling after five months of ageing. Subtly oaky, long, multi-layered palate with a touch of minerality, citrus fruit, apple and pear.
„Five hectares is the limit for me. That’s the upper ceiling of quantity and quality that one can control. For me, that point comes at five hectares. The character of a vineyard shows itself the most if we wander around it incessantly; if we live together with the parcel and nature. We experience, learn and improve year after year. Something that worked in 2010 had to be redefined in 2011. In such a dominant and warm year, the differences between the vineyards appear more slowly. I work exclusively with second-fill barrels; the first fill never makes it into the bottle. It would suppress the character of the vineyards.”
