Kakas is one of the peripheral vineyards of the Mád Basin, and the 2022 Kakas Furmint comes from its highest parcel. In terms of the soil’s properties, the top is roughly 80 cm of rock flour with rhyolite tuff subsoil. According to István Balassa, it has such unique properties that only compare it to Burgundy. It’s no coincidence that he sometimes refers to it only as ‘Petit Chablis’, and the character of the wine supports this, too. The well-ripened raw material was processed gently, followed by barrel fermentation, then ageing in 300-litre Zemplén oak for 6 months. The palate is creamy, subtly salty, with a mineral finish. Just like sipping a Chablis.
„Five hectares is the limit for me. That’s the upper ceiling of quantity and quality that one can control. For me, that point comes at five hectares. The character of a vineyard shows itself the most if we wander around it incessantly; if we live together with the parcel and nature. We experience, learn and improve year after year. Something that worked in 2010 had to be redefined in 2011. In such a dominant and warm year, the differences between the vineyards appear more slowly. I work exclusively with second-fill barrels; the first fill never makes it into the bottle. It would suppress the character of the vineyards.”
