A volcanic place of growth, yield-restricted grapes, carefully controlled fermentation – these are the three pillars of the Tokaj cellar's new estate wine, which is made from 100% Furmint and is completed by the precision of Zoltán Demeter. The Furmint grapes harvested by hand from the old vines of the Hold-völgy and the Lapis vineyards are pressed gently in whole bunches, then it is fermented and aged in tanks until the next spring. The concept is simple, yet it still counts as rare in the region when it comes to Furmint. The palate is light and fruity with apple, pear and citrus aromas, the imprints of the place of growth – not denying them, but not emphasizing them too much either. Furmint made nicely, approachably and gently, in a limited batch of 2,997 bottles.
„Maybe this special vintage was necessary so that after 13 years myself and Bortársaság could get to know each other again. The vintage made it obvious that something is happening in the world that both nature and winemaker should adapt to. The starlings knew what their task was: they arrived a month early, and we started the harvest at the beginning of September, instead of the usual end of October. One can only make good wine in big freedom, and a credible estate wine is only made if people stand behind it and the place of growth verifies them. This is more and more important in my thinking.”
