This aszú is made based on a centuries-old tradition: the equivalent of 5 puttonys of aszú, i.e. five hods full of botrytised grapes, are added to a Gönc barrel (136 litres) of must before pressing. Then the must obtained from the aszú berries goes into barrels, where the wine ferments very slowly, for up to two months. At the end of the fermentation, a touch of eszencia is added, which was collected drop by drop from the pressed aszú berries. Ageing takes place in cellars dug into the earth of volcanic origin, where the wine develops for 24 months in Hungarian oak barrels. A blend of Furmint, Hárslevelű, Zeta and Sárgamuskotály, which is full of honey, quince, ripe pear, citrus fruit, dried apricots and figs. The texture is concentrated and oily, yet with vibrant acidity and minerality. A serious wine.

„2011 was the opportunity to make the ideal dry white wine. The grapes were so healthy that they were smiling at you. This is the 13th vintage of our dry estate wine, yet we learn something new from nature every year. The most important thing we’ve experienced in the past ten years was balance. The precise timing of the harvest, but even more giving full concentration during the time of fermentation. For me fermentation is the most important time, the most significant part of a wine’s life and one that I supervise throughout. That’s the crucial point: when the grape becomes a wine.”
