This 5-puttonyos aszú is made only in the best vintages, when the end of summer is rainy and autumn provides sunshine and wind. Five hods-worth of botrytised aszú berries are added to one Gönc barrel (136 litres) of must. At the end of the fermentation, which can take months, a touch of Esszencia is added to the wine. Following maceration and pressing, the must obtained from the shrivelled berries is put into new Gönci and Szerednyei barrels. It goes through 60 months of ageing in barrels and 24 months in bottles. It is made from classic Tokaj varieties: Furmint, Hárslevelű, Zéta and Sárgamuskotály (Yellow Muscat or Muscat Blanc), it has a thick texture and an ethereal, balanced palate. Raisins, acacia flowers and nectar. It’s a rich and complex wine with 178 grams of residual sugar.
„2011 was the opportunity to make the ideal dry white wine. The grapes were so healthy that they were smiling at you. This is the 13th vintage of our dry estate wine, yet we learn something new from nature every year. The most important thing we’ve experienced in the past ten years was balance. The precise timing of the harvest, but even more giving full concentration during the time of fermentation. For me fermentation is the most important time, the most significant part of a wine’s life and one that I supervise throughout. That’s the crucial point: when the grape becomes a wine.”
