The iconic white wine of the Hungarian estate of Tempos Vega Sicilia. It has been characterized by an increasingly sophisticated style and consistent quality thanks to the viticultural and vinification methods that have been refined for two decades. As pioneers of clone selection in Tokaj, 50% of the crop that serves as the raw material for Mandolás comes from selected pre-phylloxera clones of the Petrács vineyard. The smaller part of the wine from the grapes from the rhyolite-rich Mandulás, Budaházi, Kútpadka and Gyapáros vineyards was aged for 6 months in tanks and the larger part in barrels, including for the first time this year, a 3,000-litre wooden tank. The balanced weather of 2021 and the extended ripening period, which is favourable for the Furmint variety, resulted in an exceptional vintage with long ageing potential. In order to show its round face even at this young age, partial malolactic fermentation and weekly battonage were necessary. After a year of bottle ageing, we can taste a truly refined, balanced and classic Mandolás.
„2011 was the opportunity to make the ideal dry white wine. The grapes were so healthy that they were smiling at you. This is the 13th vintage of our dry estate wine, yet we learn something new from nature every year. The most important thing we’ve experienced in the past ten years was balance. The precise timing of the harvest, but even more giving full concentration during the time of fermentation. For me fermentation is the most important time, the most significant part of a wine’s life and one that I supervise throughout. That’s the crucial point: when the grape becomes a wine.”
