On the occasion of the 30th anniversary of the establishment of the Oremus estate, several limited-edition, old vintage 5-puttony aszús and a selection box have become available again from the museum reserves of the Tolcsva cellar.
It can only be made in good vintages, when nature provides rain at the end of the summer and sunshine and wind in autumn. These are essential for the formation of the aszú berries. For one Gönc barrel of must (136 litres), they added 5 puttonys (hods) of aszú berries, and then they were macerated for a couple of days until they swelled. It was followed by pressing, then several months of fermentation. It’s thick but also elegant and vibrant in every detail, with notes of raisin, acacia flower and subtle botrytis. The palate has excellent balance between the 10 grams of acidity and the 148 grams of sugar.
Residual sugar content: 148 g/l
Acid content: 10 g/l
„2011 was the opportunity to make the ideal dry white wine. The grapes were so healthy that they were smiling at you. This is the 13th vintage of our dry estate wine, yet we learn something new from nature every year. The most important thing we’ve experienced in the past ten years was balance. The precise timing of the harvest, but even more giving full concentration during the time of fermentation. For me fermentation is the most important time, the most significant part of a wine’s life and one that I supervise throughout. That’s the crucial point: when the grape becomes a wine.”
