The young Pinot Noir plantation of Padi Hill that shows lightness and balance along with complexity and elegance year after year. This convinced the Sauskas to make Pinot Noir exclusively from their Tokaj vineyards. The white rhyolite tuff soil, which is enriched by quartz blocks, provides the minerality. The 30 days of maceration, and the mixed – barrel and tank – fermentation helps to emphasize the primary notes of the variety. The layered flavours appear owing to the 10 months of combined ageing (80% in French barrels, 20% in clay eggs). The nose and the palate is thick and dense, with ripe fruit and very elegant oak. It’s a harmonious wine that’s still young but it already has good drinkability and it gives a great experience. By all means, we should put a few bottles of it away to open them after six months or a year.
