A brilliant Sauvignon Blanc from the 1.7-hectare plot of the Padi vineyard. The wines from here have a unique freshness. After manual-harvesting, the cooled grapes were destemmed and given brief skin contact before pressing, so that even more fruit aromas could be released. It was fermented and matured in tanks for 4 months on fine lees. It has intense exotic fruit aromas, with the sourness of gooseberry and the green character of elderberry, restrained fennel and minimal minerality. A perfectly varietal, fresh and thirst-quenching white wine.
