Alice, the title character of the tale, is the flagship wine of the Ruppert winery. It is primarily Cabernet Franc, complemented by Merlot and Cabernet Sauvignon. The grapes are hand-harvested and undergo controlled fermentation in open vats, then it is aged for 19 months in new French, 225-litre oak barrels, followed by 2 years of bottle ageing. It is bottled with low sulphur content.

Its rich nose exudes ripe black berry fruit, prune and blackberry, while on the palate, subtle oak notes unfold alongside cedar, sweet spices, tobacco, coffee and chocolate. The alcohol is well-integrated, the tannins are finely gripping and the finish is long.
