Cabernet Sauvignon is rarely – only in the best vintages – made as a separate wine at the cellar. Usually, it’s the Merlot and the Franc that do better on the hill, hence that’s why we associate these two varieties with the Rupperts. In 2017, however, out of the two Cabernet Sauvignon plots, the lower location with the better water supply yielded the best fruit at the end of the harvest, better than what the Franc or Merlot could give at the time. That’s how after a five-year long hiatus, the pure Sauvignon was made for the first time since 2012. Its palate is even broader than the Franc’s, with less spice, more oak and dark fruit notes. It’s a ripe, rich wine for long tables and big dinners. 

It was fermented on the skins in tanks, then most of it was put into new barrels where it was aged for a year and a half.
