This exceptional Cabernet Sauvignon is produced only in outstanding vintages when the grapes reach perfect ripeness in every aspect. The bunches are hand-harvested, and only the finest grapes are selected through individual-berry sorting before processing. Fermentation is carried out in open vats with punching-down, followed by 16 months of ageing in mixed 225-litre barrels. The oak is integrated subtly, bringing notes of vanilla, smoke, and deep, cool tones of black berry fruit. On the palate, the wine is layered and taut, with flavours of blackcurrant, plum and sour cherry, complemented by restrained spiciness and vibrant acidity. Medium to full-bodied with a dense texture and a long, lingering finish, this is a bold yet elegant wine that will continue to reveal more with time.
