According to Ákos Ruppert, a ‘serious’ rosé has three secrets. The first: it can only be made exclusively from destemmed grapes, from the free-run juice without pressing. The second is the ageing: together on the fine lees and for longer than usual. The third: the use of the cork which lets the wine age and develop for longer in the bottle. That’s how the Tűk és Tavirózsák was made in 2021. “Our only Kékfrankos grows at the foot of the hill, on forest soil. It’s a five-year-old plantation, altogether 0.7 hectares, cultivated organically from the beginning, with loose bunches,” says Ákos. That’s where they harvested their rosé from. Destemming was followed by longer skin contact, tank-fermentation and half a year of ageing in used barrels. It’s light, elegant and fragile.
