Tentua Carrubo is located in the Primitivo di Manduria DOC area, on the western side of the heel of the boot – while the other Tormaresca wines typically come from the eastern side, on the Adriatic coast. The harvest is carried out at minimal over-ripeness, then the gentle processing is followed by brief maceration in steel tanks, where the malolactic fermentation also takes place. The wine is then aged in 500-litre, first- and second-fill French barrels for more than a year.
In terms of style, it features everything one expects from a Primitivo, but it is a little different: overripe, but not boisterous; jam, dark chocolate covered sour cherry with brandy, and at least as spicy. Lots of dried figs and tobacco. Due to the long oak ageing, it appreciates a bit of airing.
