A small family winery with a long tradition (founded in 1600). Until his passing in 2021, Luigi Gregoletto led the estate, working for over 70 harvests. His family carries on his legacy, performing all tasks by hand, including bottling. The sui lieviti wines are relics of regional history, harking back to a pre-champagne era; after a slow secondary fermentation in the bottle, a fine sediment remains at the bottom, which is not removed. Due to its crown cap, this wine cannot qualify as DOCG, but the Gregoletto family believes it’s the best closure method. Honey, orange and lime aromas are complemented by vibrant, refreshing acidity and a very fine mousse. Each sip is delicious, free from bitterness, and thanks to the lively acidity and low residual sugar, it finishes pure and dry. If not for its heritage, one might think it’s an avant-garde natural wine.
