Cervaro della Sala was the first celebrated Italian white wine to be about fuller body and longer maturation. It created a style: besides the bit of Grechetto, most of it has been composed of Chardonnay from the first vintage (1985). It was fermented in barrels with malolactic fermentation, aged for half a year in barrels, then for one in the bottle. Along with the broad, oily feel and oaky notes, it has a precise mineral character, a long palate and a detailed overall picture.
