The Castello della Sala estate is located in Italy’s Umbria region, near the border of Tuscany and just 18 kilometres from the historic town of Orvieto. The medieval castle's estate spans 600 hectares, with 229 hectares dedicated to viticulture at elevations ranging between 220 and 470 metres above sea level. The gently rolling hillsides provide an ideal microclimate and diverse vineyard exposures, creating the perfect foundation for premium winemaking. This terroir is particularly well-suited to white grape varieties. The clay-limestone soils, which are enriched by ancient marine sediment and fossils, combined with eastern exposures and significant diurnal temperature shifts, preserve freshness, elegance and complexity in the wines.
Cervaro della Sala was the pioneering Italian white wine that redefined expectations, showcasing fuller body and extended ageing potential. It established a new style: from its inaugural 1985 vintage onward, the blend has been dominated by Chardonnay, with only a small portion of Grechetto. The 2023 vintage remains faithful to the estate’s signature style of elegance and complexity.

In the winery, gravity-flow technology ensures the gentlest possible handling of the grapes, eliminating mechanical intervention at every stage. The grapes were harvested at dawn to preserve their pristine purity of fruit and freshness. The must underwent four hours of cold skin contact at 10°C, followed by settling in stainless steel tanks. Fermentation and partial malolactic conversion then took place in barrique barrels.

The Chardonnay was racked back into stainless steel tanks in February and blended with the separately fermented, unoaked Grechetto. The wine continued its ageing in the bottle within the cool depths of the historic cellar.

Bright straw yellow with greenish tints. Aromas of acacia blossom, bergamot, cedar and ginger, with subtle notes of buttered toast and flint alongside. The palate is taut, elegant and lively, with its saline character balanced by exceptional freshness. The finish lingers harmoniously, revealing tropical fruit, roasted hazelnuts and a touch of spice.
