A well-established, considered methodology and a style refined vintage after vintage. The bunches from 27-year-old vines are pressed whole, then after cold settling, fermentation begins with native yeasts. After four months on fine lees, the wine is bottled without fining and after gentle filtering. The 2024 Sauvignon Blanc is not a carnival of explosive New Zealand tropical notes, but rather a more composed expression of the Marlborough varietal style. The nose shows grapefruit and lemon peel, subtly shaded by a seaside pebbly minerality and discreet spiciness. After opening, it’s worth staying close to the glass, as the wine continues to evolve. The initial subtle hint of reduction is a deliberate element of the wine, keeping it fresh and taut. The palate is saline and chalky, supported by vibrant acidity, with a long, lingering finish. A long-lived, atypical, complex and refreshing Sauvignon.
